It depends. Both are great. Knight if you want to be able to wear more armor. Pyro if you want to get skills sooner/more attunement. Tbh every 120-150 build should be a knight or pyro, as they both have the lowest luck, which is worthless unless you're a luck build. If you're going 30-90, pyro is better for pyro objectively.
