Bg3 gondians hostile.
I dunno if knocking them out would work, but there are some story reasons why they're hostile. The gondians have their families captured in an underwater prison and they'll blow up if you go to far in the foundry. If you save their families, they'll revolt against their captors.

When going to the steel foundry, I found out I can get rid of the Steel watchers and the banites pretty easily, and as soon as I switch off the motivator the gondians turn from hostile to neutral, effectively allowing me to stop fighting them. You're as guilty as the people who imprisoned the Gondians. You killed someone. You need to face justice. If the first two options are chosen, Redhammer takes the party to the Iron Throne. I think the only result of the steel foundry is not having to deal with the steel watchers anymore, in particular when going to kill Gortash.
